Recently I was pleasantly greeted with the smell of freshly baked cookies as I approached my front door, and was met with a bag filled with chocolate chip cookies with a note from my neighbors across the hall. I walked into my apartment with the goodies, eager to show my roommates and we all gathered by the table, remarking on the sweet gesture while indulging in the perfectly baked cookies.

I’ve cooked and prepared a variety of dishes throughout my college career, but my favorites are always the ones that remind me of home. My mother’s homemade Korean meals hold a very special place in my heart.

Dumpling night — an evening my friends and I decided to plan earlier this semester — will forever go down as one of the most memorable and enjoyable nights I’ve had here at the University. Though dumpling making can be long and tedious, it is a process that is meant to be shared with loved ones, and this fall I am hoping to have many more dumpling nights shared with my friends and family.

As a college student who can deeply appreciate a cheap, fast and — not to mention — very delicious meal, the rotisserie chicken from Costco quickly became my go-to food product. With my busy schedule, having a nice and hearty meal can be a bit difficult to plan out or make. However, I have found that having a pre-cooked and tasty protein source like a rotisserie chicken gives me many yummy options for quick meals I can eat between classes.

As we make our way back to Charlottesville for the start of the new semester, we all brace ourselves for the scorching summer heat which consistently seems to make its presence known on Grounds at the beginning of each school year. Although some may dread this hot summer weather, I may have just the recipe to keep us all from melting this upcoming semester.

What exactly is sea moss? When first hearing about this — through my housemate — my immediate thought was green slime. However, I have learned that sea moss, also known as Irish moss or red seaweed, is a type of red algae that is most commonly used as a thickening agent in foods such as soups, smoothies, teas and other drinks or liquid foods. More importantly, however, sea moss is known for its many health benefits.

It was a day just like any other when my housemates and I sat around our dining table talking about how classes were going and discussing spring break plans. One of my housemates showed us a picture of her meal from the other day, and we all agreed that the picture was worthy of a front cover page in a food magazine. Suddenly, the idea hit us — we should start our very own food Instagram dedicated to documenting the delicious meals our apartment makes. Immediately, we all agreed that this was the best idea we had ever heard, and we created the account seconds later.

Shakshuka first originated in North Africa — the former Ottoman Empire and specifically, Tunisia — after tomatoes were introduced to the region through the Columbian exchange. When immigration between Israel and North African countries was heavy and the immigrants suffered financially, Shakshuka, being both hearty and affordable, quickly became a staple dish. Not only was this dish an affordable option, but it was also one that was extremely easy to prepare. Shakshuka translates to “mixed up” which reflects the way in which the dish is prepared. It is essentially poached eggs cooked in a tomato stew with veggies and other spices thrown into one pan, which is then cooked on low heat until it is in its desired consistency.

As fall approaches us here in Charlottesville, the air becomes crisp and cool, and we reach for our sweaters and sweatshirts to combat this cold. As we welcome this chilled autumn weather, here is a great Korean recipe to warm you up for the remainder of the season. This traditional rice porridge dish, also known as juk (죽), originates from Korea and has many different variations existing in other countries. China has congee, jok in Thailand and lugaw in the Philippines — all of which are variations of rice porridge and are very similar.

As a second-year student with no meal plan and zero experience cooking, I decided to take on the challenge of cooking real meals for myself as opposed to my daily sandwiches, frozen Trader Joe’s meals or instant ramen. This Gigi Hadid vodka pasta was, in my opinion, one of the best and easiest dishes I have made so far. If I can make it, I guarantee you can too.

Imagine this — woken up by your alarm at 9:00 a.m., you hit the snooze about four times and try to rub the drowsiness out of your eyes, but it doesn’t seem to work and you’re still yawning incessantly. Getting up, you realize there’s only one solution to this — a solution that happens to take the form of a bitter, yet satisfying, beverage. You walk into the kitchen and in five minutes, you have a cup of coffee that is able to cure this drowsiness in just a few sips. Even the smell of it brewing has an alluring quality to it. After starting your day off right, you’re ready to head off to class energized throughout the whole day.

The evolution of Runk Dining Hall, located near the Gooch-Dillard suites, has become the focal point of all first-year dining thanks to Harvest Table Culinary Group. Harvest Table is a culinary group that collaborates with local farmers and vendors to bring fresh ingredients and meals to Runk to connect the community through food. They strive to create authentic food experiences through their freshly sourced meals. In the fall of 2020, Harvest Table visited Runk only a limited number of times, almost acting as a pop-up attraction. They announced their kitchen takeovers about three to four times last semester, attracting a flock of students to Runk. Now, in the spring of 2021, Harvest Table has completely taken over all of Runk’s meals.
