A pumpkin brioche French “toast” to fall

A seasonal take on the classic breakfast — Trader Joe’s pumpkin brioche twist is essential for the perfect, cozy fall dish.

This French toast has just the right amount of fall flavor — especially when paired with a rich maple syrup, smooth salted butter and hot cup of apple cider. 

It is not the leaves changing color — or the cooler weather — that signifies the presence of fall for me, but rather the Trader Joe’s seasonal fall items making their way back on the shelves. Few things are better on a chilly autumn morning than a hot breakfast and this French toast recipe is sure to get those cozy vibes just right. 

As a college student and Trader Joe’s enthusiast — I am dedicated to finding more ways to enjoy good food without the hassle. French toast is one of those classic recipes that you likely already have most of the ingredients you need — and it’s less of a mess than pancakes which is a huge plus. With minimal ingredients, simple cleanup and fast cook-time, French toast is perfect for students. It’s also incredibly easy to alter this recipe to fit your needs — whether you’re dairy free or making brunch for a dozen people — French toast is sure to deliver. 

Prep time: 5 minutes

Cook time: 15 minutes

Yields: about 4 servings

Ingredients: 

  • 2 large eggs
  • ⅛ cup milk or milk substitute 
  • 2 tsp cinnamon
  • 2 tbsp salted butter (plus optional 1-2 tbsp for topping)
  • 1 loaf Trader Joe’s pumpkin brioche twist
  • Powdered sugar (optional)
  • Maple syrup (optional)

Instructions:

  1. Whisk together the eggs, milk and cinnamon.
  2. Heat skillet over medium-low heat. Add salted butter to coat the pan so French toast does not stick. 
  3. Dip one slice of bread in the egg mixture. Make sure to coat both sides of the bread and allow excess egg mixture to drip off — avoid allowing the bread to soak up too much moisture.
  4. Place bread coated in egg mixture onto a preheated and buttered skillet. Allow French toast to cook until golden brown on both sides.
  5. Repeat steps three and four with as many slices as you’d like. 
  6. Sprinkle French toast with powdered sugar, a drizzle of maple syrup and a pat of butter for the perfect presentation.

This pumpkin twist brioche has an extremely subtle pumpkin flavor and the best thing about it is the spiced swirl. This French toast has just the right amount of fall flavor — especially when paired with a rich maple syrup, smooth salted butter and hot cup of apple cider.
