The recent decline in the bottled water industry has left beverage companies eager to develop a new product. PepsiCo, for example, has looked to Latin America's popular beverage, coconut water, as inspiration for its latest product. Coconut water fits in with the recent shift in health-conscious consumer trends, leaning away from carbonated sodas and artificial flavoring and toward natural products with nutritional benefits. Not only is it naturally flavorful, but it also is low in calories and high in potassium. In an effort to follow this trend, PepsiCo has entered into a contract to purchase Amacoco, Brazil's top coconut water company. Through this investment, which has been estimated to more than $3.3 billion during the next few years, PepsiCo hopes to benefit from coconut water's appealing taste and naturally nutritional qualities.\n-compiled by Jade Hall
